Chickpeas with SpinachChickpeas with Spinach   

  • 4 tablespoons olive oil
  • 1 teaspoon hing
  • 1 cup tomato puree
  • 3 cups cooked chickpeas
  • 1 pound spinach, steamed and chopped
  • 1 teaspoon salt
  • 1/2 black pepper
  • 1 teaspoon brown sugar
  • 1 teaspoon Italian herbs
  • olive oil, lemon juice, and parsley to garnish

DescriptionDescription  A Middle Eastern dish of chickpeas and spinach in a tomato sauce.
InstructionsInstructions  Heat oil over medium heat. Briefly fry hing. Pour in tomato puree and cook 3-4 minutes, stirring frequently. Fold in chickpeas and steamed spinach. Mix in remaining seasonings. Reduce heat and cook for an additional 2-3 minutes. Serve hot drizzled with olive oil and lemon juice.
NotesNotes  This dishes is vegan and "sattvic" (gives proper balanced energy for body and mind)
